• During the fermentation process, Kimchi produces lactic acid bacteria, and its sour taste becomes stronger over time
• During fermentation process, umami and acidity are added, giving sour Kimchi a deep and complex taste
• The deep flavor of fermented Kimchi is a special taste that cannot be easily experienced in other foods and shows the dimension of flavor that only fermented foods that have been aged for a long time can provide
• Since Kimchi is a food that can be stored and eaten for a long time, most products have an the expiration date of 6-12 months from the date of production and some products do not have an expiration date on them
• To ensure a crunchy texture and fresh taste, the best by date is indicated as 1 month from the date of production. Therefore you can safely consume it for several months after the expiration date.

[Fermentation of Kimchi]

• If you refrigerate our Kimchi as soon as you received, full scale  fermentation begins about 1-2 weeks after production, and after about 2-3 weeks, it reaches a fermented taste with a PH 4.5 or lower
• To expedite the fermentation process, keep the Kimchi at a room temperature for 1-3 days before refrigeration
• Please be noted that actual number of days to reach PH level lower than 4.5 may vary depending on the temperature and condition of refrigerator
