• During the fermentation process, Kimchi produces lactic acid bacteria, and its sour taste becomes stronger over time
• During fermentation process, umami and acidity are added, giving sour Kimchi a deep and complex taste

• You can safely consume Kimchi for several months even after the expiration date

• If you refrigerate our Kimchi as soon as you received it, full scale fermentation begins approximately 7 to 10 days after production
• The time it takes to reach a fermented taste of PH 4.5 or lower will vary depending on subsequent temperature control, air exposure, etc.
• To expedite the fermentation process, keep the Kimchi at a room temperature for 1-3 days before refrigeration

When storing Kimchi, we recommend FDA-certified/compliant glass containers for your safety and flavor preservation. When ordering Kimchi, you can choose from glass jar or container with the following features:

• Both are FDA certified/compliant and BPA-free
• Both are guaranteed to be air-tight and leak-proof locking the liquid, smell and moisture inside
• The container is made of tempered glass and can be used in the oven, microwave and dishwasher (except for lid)
• The container has no trace of harmful environmental hormone to human body in the microwave use
• 2.5, 2.7 and 3.7L container comes with a handle on the lid
• 4.7L container comes with two handles on the lid
• When moving the container, do not hold on to the handle(s)
• The jar is made in the US, the container is made in Korea
